Before this pandemic, we all were busy managing our fast-paced life. Out of nowhere, everything around us paused. Something, we humans never imagined off. It did take a lot of mental toll on us, as we’re still surviving this pandemic. This pandemic has taught us to be grateful. One thing I’m grateful for during hard times is having a family dinner together. It was nearly impossible for us to have at least one meal of the day together, during the pre-pandemic period. And it was this pandemic that brought us together, where everyone in the house would make something or the other for dinner.

I think y’all will agree with me on this. Whenever we fight with our mom or loved ones’ they’ll make up to us with our favorite food. Hence, good is food, mood is good. 

We all deserve good food. Here, I’m back to give hug in a mug, for being brave and just surviving 2020! 



Cinnamon roll mug cake



I think everyone just loves cinnamon rolls and it gives us every damn reason to! It has the warmth from the cinnamon, sweet molasses flavor from the brown sugar, and the cream cheese frosting. This mug cake right here will help you fulfill your cravings for cinnamon rolls in no time. The mouthfeel won’t be the same as cinnamon rolls but you’re going to love this. Bonus points for an eggless recipe!

Ingredients:

  • 3 tbsp flour.
  • 2 tbsp brown sugar.
  • ½ tsp of baking powder.
  • Pinch of salt.
  • 1 tbsp chopped walnuts (optional).
  • 2 tbsp melted butter.
  • 2 tbsp milk.
  • 1 tsp cinnamon.

Icing:

  • 1 tbsp powdered sugar.
  • 1 ½ cream cheese (optional).
  • ½ tsp milk.

Procedure:

  • Take a microwave-safe mug. Add all the dry ingredients: flour, brown sugar, baking powder, a pinch of salt, cinnamon, and chopped walnuts. Mix it.
  • Add melted butter and milk. Mix until well combined.
  • Microwave for 55 to 60 secs.
  • Let it cool down for a minute or two.
  • While the mug cake is cooling down, mix the powdered sugar, cream cheese, and milk in a small bowl.
  • Generously drizzle the icing over the mug cake and dig in while it's warm!!

Coffee walnut mug



This mug cake is for all my coffee lovers. Let me just say, coffee is a very versatile ingredient and goes well with everything. I’m not a coffee person, yet I somehow love this mug cake. The walnuts give you a bite, it is nice and moist, and eggless! So, it is a win-win situation for all.

Ingredients:

  • 3 tbsp flour.
  • 1 tbsp instant coffee powder.
  • Pinch of salt.
  • 2 tbsp sugar.
  • ½ tsp of baking powder.
  • 1 tbsp of chopped walnuts.
  • 1 to 2 drops of vanilla essence.
  • 2 tbsp melted butter.
  • 3 tbsp milk.

Procedure:

  • Take a microwave-safe mug, add all the dry ingredients and give a quick mix.
  • Add milk, melted butter, and vanilla essence to dry ingredients. Mix until well combined. Do not over mix.
  • Microwave it for 60 secs. 
  • You can serve it with cream cheese or just dig in as it is.

Tip: the timing may vary as every microwave is different.
