Butter is food lotion.
Today’s blog is simply going to be utterly butterly delicious. Butter is
one my favorite staple ingredient, just smearing it on plain boring bread,
makes it taste so much better. It plays an important role in baking and cooking
as it adds a lot of richness, flavor, structure, and texture to your dish. When
it comes to food gastronomy, butter is that one ingredient where you don’t have
to think twice before adding it to your food palette.
We, humans, moisturize our skin to keep it healthy, nice, and soft. That’s
the sole purpose of butter in cuisine, it adds more depth and sense to the
dish. It is an ever-lasting delight for any cuisine. Butter is a food lotion
and you can’t change my mind on that. You and I have asked for extra butter at
some point in our life (I still do!!). As I’m talking about butter, it is
nearly impossible to not talk about ‘Butter chicken’. It tops my favorite food
list. I could eat it for 365 days. The smooth velvety texture, beautiful bright
orange color, and the hint of sweetness to it. This is the kind of foodgasm we
all deserve.
I was craving for butter chicken and momos at the same time, so I’ve
decided to make ‘Butter chicken momos’. I love momos and I’ve missed it during
this quarantine. Butter chicken makes me feel loved and momos are my comfort
food. You guys have trust me on this, as butter chicken is one of my
signature dishes. All my family members and friends drool over it!
Let’s dive in and see what kind of ingredients does this recipe calls
for!
Butter chicken momos.
Ingredients:
Butter chicken gravy.
- 100
grams roughly chopped onions.
- 500
grams roughly chopped tomatoes.
- 1
tbsp garlic paste.
- 50
grams cashew.
- 1
tsp fenugreek powder (kasuri methi).
- ½
tsp garam masala.
- 4
tbsp honey.
- 2
tbsp Kashmiri chili powder.
- 5
tbsp butter.
- 1
tbsp oil.
- 3
tbsp cream.
- 1.5
tbsp white vinegar.
- Salt
to taste.
Method:
- In a
pan add onion, oil, a spoonful of butter and once the onions are cooked
add tomatoes and cashew nuts
- Add
some water and garlic paste, salt, white vinegar, honey, garam masala powder,
and chili powder. Evenly mix it and let it simmer for 15-20 minutes
- Churn
the mixture into a fine puree.
- Strain
it back into the same pan make sure there is minimal wastage.
- Add butter, cream, and Kasuri methi and let it simmer for 5-7 minutes.
For the momo.
- 300
grams of minced chicken.
- 1
tsp garlic paste.
- 1
tsp ginger paste.
- 1
chopped green chili.
- 1tsp
coriander powder.
- 1tsp
garam masala.
- 1
tbsp red chili powder.
- 1
tsp fenugreek powder.
- Salt
to taste.
- 2/3
pieces of charcoal
- 2
tbsp ghee.
- 1 ½
cup plain flour.
- Salt
to taste.
- 2
tbsp oil.
- Water
as required.
Method.
- Take
a nice clean bowl, add your flour, salt, oil, and water. Mix it and make a
dough out of it. Add your water gradually, as required to form a dough.
- Take
another bowl, add your chicken mince, ginger-garlic paste, green chili,
coriander powder, garam masala, chili powder, fenugreek powder, and salt.
Mix it well.
- Make
a well in the center of the chicken mixture. Place a bowl with charcoal in
the center. Add ghee on it and cover it for 10 mins.
- Dust
flour on a worktop, place a portion of momo dough, and roll it into a thin
sheet. Cut-out roundels from the sheet with a medium-sized cookie cutter.
- Add
spoons of mixture in the center of a roundel. Seal the edges and shape
into momos.
- Heat
water in a steamer. Add the momos, cover, and steam for 10-12 minutes. Set
aside in a plate. If you don’t have steamer, you can use idli maker.
- Plate
your momos and generously slather your gravy on your momos. You are all
ready to serve your butter chicken momos.
- If
you wish to pan fry or deep fry your momos, feel free to do it.
I plated my dish by smearing generous amount of gravy and placed my
momos on it. Served with momo chutney, coriander chutney, and some
onions.
Butter chicken momo is the real deal guys. This recipe might seem lot of
